When I had the opportunity to learn how to make a perfect French macaron from a professional, I couldn’t pass it up. Hollywood’s Diplomat Resort and Spa Executive Pastry Chef Henry Martignago and his culinary team taught me all of their secrets. Now, it’s my job to spill their secrets!

This is how to make a perfect French macaron:
Ingredients
- 1/2 cup of egg whites
- 1/2 cup of granulated sugar
- 3/4 cup of almond flour
- 1 cup of confectioners sugar
Directions
- In a small mixing bowl, mix your egg whites and add half of your granulated sugar
- Once it’s at a soft whip, add the rest of the granulated sugar and whip
- While your egg whites are whipping, combine your almond flour and powdered sugar in a food processor (no clumps!)
- When your egg whites are whipped, fold in the almond/powdered sugar mixture
- Squeeze the batter onto a baking sheet
- Bake at 280 degrees in a convection oven for 12-15 minutes

It’s 22 feet tall and has 12,500 French macarons on it! It was made with:
• 1200 eggs
• 332 pounds of sugar
• 165 pounds of almond flour
