The New Year is just around the corner… and many celebrate the New Year with the traditional Mexican dish of Posole, or Pozole.
This posole recipe is cooked in two parts- the meat and the thick soup.
It’s best served with a garnish, cilantro, shredded cheese, or lime wedges.

It takes more than six hours to cook Posole.
Posole Recipe Ingredients
For about 8-10 serves of Posole, the below ingredients are needed:
Pork Part
- Pork Shoulder -12 pounds, boneless
- Cumin Powder – 1 tablespoon
- Garlic Powder – 1 teaspoon
- Smoked Paprika – 1 teaspoon
- Red Onion -1/2, sliced
- Salt and Pepper to taste
Soup Part
- Cooking Oil – 1/4 cup
- Red Onion – 1/2, chopped
- Garlic Cloves – 3 minced
- Plum Tomatoes – 3, diced
- Chicken Broth – 6 cups, low salt
- Pinto Beans – 28 ounces, undrained
- White Hominy – 28 ounces, drained
- Tomato purée – 28 ounces
- Mexican Oregano – 1 tablespoon
- Cumin Powder – 2 teaspoons
- Salt and Pepper to taste
Posole Recipe Directions
Pork Part
- Mix all the spices; cumin powder, smoked paprika and garlic powder in a bowl with little water so that it turns into a paste
- Marinate the pork with the paste along with salt and pepper
- Roast the pork for about 5-6 hours in a pre-heated oven
- Shred the pork into small pieces when it turns tender
Soup Part
- Sauté the onions in oil over medium-low flame until translucent
- Add garlic and stir well, followed by diced tomatoes
- When the mixture softens, add all the remaining ingredients and boil
- When it bubbles up; cover it, minimize the heat and simmer for a half-hour with occasional stirring
- Add the pork and simmer without cover for another 30 minutes
- When all the ingredients are thoroughly mixed, remove the pot from heat
